Caribbean Cuisine

April 5, 2011

Day 2 of Tropical Week takes us to Caribbean Cuisine. This is sure to be my favorite part of our trip, as I just love to eat. And when I’m not cooking it – I’m bound to enjoy it.

The great thing about dining outside of the country is that food is prepared so differently than the way us Americans do it. It’s not soiled in fattening sauces, covered in cheeses, and fried beyond recognition (which, that’s not too horrible) – the food is fresh, healthy and light.

Here are the foods I’m dying to eat on our trip …

Mahi Mahi Tacos in Mexico

***

Conch Ceviche in Belize

***

Chimole (Black Dinner) in Honduras

***

Key Lime Pie Martini in Key West (of course)

***

Sorry to do this to you guys. Maybe it’ll get you thinking about your next vacation… (you know you need one)
