If You Like Piña Coladas

Piña Colada Cake? Yes, please!

We’re going on a Caribbean cruise in little over a month. I haven’t really thought much about it since I booked it in December, but last night while booking our excursions, I got the itch. I don’t know if I can wait a whole. five. weeks.

Excuse my pity party.

Luckily, I stumbled across this recipe, and I think making this cake should tide me over until then. Or at least until I find some sort of Strawberry Daiquiri cookie recipe or something.

I might even get a little crazy and make a few fresh coladas while we officially move in next week. Hooray!!

Piña Colada Cake

Recipe adapted from Smitten Kitchen

INGREDIENTS

Cake
2 cups all-purpose flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 stick unsalted butter, softened
1/4 cup light  brown sugar
1 tbsp  dark rum
2 large eggs, at room temperature
1 cup cream of coconut
1/2 cup  finely chopped fresh pineapple (or pineapple from a can, strained, juice reserved)

To brush over the cake
1 to 2 tablespoons rum (SAYS optional, I say NECESSARY!)
2 tablespoons pineapple juice (optional)

Glaze
1 cup powdered sugar
Pinch of table or fine sea salt
1 1/2 to 3 tbsp pineapple juice

2 tbsp dark rum for sprinkling over cake (SAYS optional, I say NECESSARY)

DIRECTIONS

Preheat oven to 350°F. Butter a 9-inch round cake pan and prepare the pan with cooking spray, butter or butter and flour.

Whisk together flour, baking powder, baking soda, and salt in a medium bowl. In a large mixing bowl, beat butter and brown sugar with an electric mixer at medium speed until pale and fluffy, then beat eggs, one at a time, and rum. Add cream of coconut and mix; the batter will look like it’s curdling but will all work out in the end. Add dry ingredients, half at a time, mixing and scraping down bowl between additions. Mix only until flour is just incorporated. Using a rubber spatula, fold in bits of pineapple.

Spread batter evenly in prepared pan. Bake until golden and a wooden pick inserted in center of cake comes out clean, 35 to 40 minutes. Cool in pan on a rack 10 minutes, then run a knife around edge of pan. Invert onto rack and discard parchment.

For extra flavor, while the cake is still hot you can brush it with rum (!) or pineapple juice.

Cool cake completely at room temperature, or in the fridge if you are impatient for cake (holla!). Once completely cool, place powdered sugar and salt in a small bowl with 1 1/2 tablespoons pineapple juice and whisk until a thick glaze forms. Thin glaze only as needed, adding additional pineapple juice a teaspoon at a time until glaze is just thick enough to pour. Pour glaze into middle of cake and if it’s too thick to crawl to the edges itself, nudge it with a spatula until the top is covered. Serve immediately or let it set in the fridge for 20 minutes or so.

Side Note: Best enjoyed while watching the sun set. It gives the best effect.

Painting Update

Wellll… I’m not done. There’s your update.

Just kiddin’.

A lot was done this weekend, but I never truly realized how much work it was. Even with a Power Painter. I still have the hallways, edging, and an extra coat to do before I’m satisfied. I didn’t even get to the guest bedrooms. My guests will just have to enjoy the stark white for now. So there.

Speaking of the Power Painter – it took me a while to get the hang of it. After putting it together and figuring out when to squeeze for more paint – I was like a pro. Until this…

Hi, nice little rainbow of gray (or grey)! In the midst of me rolling away, one of the paint-filled tubes became detached  and the paint started a-flyin’. I sort freaked out. My pants were covered, my tan flip-flops were tie-dyed grey (or gray), and I made some abstract art while I was at it. Good times.

Once I regained my composure (and the rainbow was covered), I started on the big wall. Here’s a shot – I used Fashion Gray as the darker accent color…

Lookin’ good! Disregard that hideous fan. And the horrible light. I forgot my camera so I had to use the trusty iPhone. Ah technology. 

And of course, I don’t believe in all work and no play. So after the painting fiasco, I stopped for a quick pick-me-up…

Don’t judge me.

After I got my fix, er, yogurt, back to painting I went and I’m still going. As long as it’s somewhat done by Friday, I don’t care. I just want to move in already. Sheesh.

Trendspotting: Oscar-Worthy Looks

My hands are sore and full of calluses from painting all weekend. And no, I’m not exaggerating. And I’m not done. Damn you, Sunday night goal!

Good thing I had the Oscars to ease the pain. Except for James Franco – watching him was pretty painful…

 But I digress.

There were some pretty noticeable trends I absolutely loved. And I would totally wear most of them, if I could pull it off.

By far, my favorite dress was Scarlett Johanson’s. Her makeup, dress and hair – just perfect. Hip, cool and fresh. Just like her. (I don’t know her personally, but I feel that’s what she’d be like.) I bet Ryan is kicking himself. Ha.

Happy Weekend

Post # 2 of the day. Woah.

Tonight begins the ever-famous painter’s tape-taping. This is my most favorite part of painting (insert hint of sarcasm here).

Then, the actual painting shall commence.  I’m sure (or hoping) I’ll have a few friends stop by to help, but I don’t expect anyone to stay for the duration – only if they want to. (and if you’re one of those friends reading this, I’ll pay you in frozen yogurt!) I hope to have the entire house painted by Sunday night.

And to make this all go a little faster (and to keep my sanity), I got one of these bad boys to make my Sunday night goal somewhat possible….

Pretty hardcore, eh? It’s a Paint System with Power Rollers. That’s just how I roll.

I’ve decided that I’m not going to tell you which color(s) I chose. You may or may not be surprised.

Here’s hoping it looks ok!

In the Nude

Seems like everyone is walking around in the buff these days. Fortunately for us, they’re clothed. There are just some people in this world I’d rather not see in the nude – no offense (and I’m sure you wouldn’t want to see me nude either).

Anywho, Nude is the new black this year and I’m diggin’ it. It’s feminine, breezy and just plain beautiful. My kind of nude.

If you’re a little bashful and aren’t really ready to get fully nude just yet, try this dress on for size. So simple. So cute. So cheap! ($14.99)

I bought this skirt the other day – I love how it’s short and flowy. Not often can you find that combo – plus, it’s nude and only $24.50.

So by now you’ve probably figured out I pretty much only wear wedges and sandals. What can I say, I’m a Florida girl. These are stylish, affordable at $29.99 and wedge-y. Heaven.

Last, but certainly not least, you have got to get a nude bag this year. I know, I know – it’s a little scary getting a bag that can get dirty so easy. But, this one is worth it at a $100 (plus, it’s a darker nude)…

Note: My apologies to my fellow salted chocoholics for not posting yesterday. When I first started this shindig, I vowed to post each day Monday-Friday.
