Bacon Wrapped Pineapple Bites

How ridiculously good does that look?!

Bacon-wrapped pineapple bites. It’s like breakfast/lunch/dinner/dessert in one. Sweet and salty (heaven) and the perfect summer treat – or dinner.  You may or may not know that I tend to be lazy when it comes to dinner – and if you don’t know, read this  – so when I saw this recipe, I was all over it.

Plus, it’s a Paula Deen concoction. A lady who happens to be my cooking idol.

You see, we’re very similar in so many ways…

1.) She loves butter on everything (well let’s be honest here, who doesn’t?)

2.) Judging by the way she cooks, I can tell she believes that if it’s bad for you, it’s good (totally and utterly agree)

2.) Girl can cook (I’m not nearly as good)

3.) She force-feeds her man (ok, she may not have to force-feed, but I’m guilty of doing that – got it from my momma)

4.) She’s awesome (I think I’m pretty awesome, too)

Clearly we’re foodie soulmates.

 

Bacon-Wrapped Pineapple Bites

Recipe adapted from Paula

INGREDIENTS

1 cup pineapple juice

1 cup fresh orange juice

1/4 cup soy sauce

3 tablespoons firmly packed dark brown sugar

1 large fresh pineapple, peeled, cored, and cut into 1-inch chunks

12 slices bacon, cut crosswise into thirds

DIRECTIONS

Soak 36 toothpicks in water for 30 minutes; drain, and set aside. Preheat oven to 400°F. Line a rimmed baking sheet with aluminum foil.

In a large bowl, combine pineapple juice, orange juice, soy sauce, and brown sugar. Add pineapple, cover, and chill 30 minutes. Drain pineapple, discarding marinade.

Wrap each pineapple chunk with 1/3 slice of bacon, and secure with a toothpick.

Place on prepared baking sheet, and bake 30 to 35 minutes, or until bacon is crisp.

Serve warm.

    RACH! My dad knows Paula — we used to call her “Aunt Paula,” for reals! Add it to the list :) And these look amazeballs, BTW.

    you’re right, scuce – why eat normal ol’ fruit when you can wrap it in fat-ridden bacon? glorious!
